I have found that I had 2 Great Uncles that emigrated to Canada just before 1914.  Both served with CEF.
Walter Sidney COWLING (Rgmt No. 16990) served in the 7th Battalion CEF from 18/09/1914 and was kia on 27/09/1915, his memorial is at Berks Cemetary.
Herbert Frederick COWLING (Rgmt No. 763668) served in the 122nd Overseas CEF Battalion from 26/04/1916.  I believe he survived

I would like some direction as to how I can find out more about their Service Records, etc

I can be emailed on mike@robinson56.freeserve.co.uk

Their service records are held by Library and Archives Canada.

This site will allow you to see their attestation documents. (I just confirmed both are available.)

I did this a few years ago for my Great Grandfather and had his entire record copied and sent to me.  It was colorful.  Well worth the research.
